Spinach Salad

This ubiquitous green vegetable might seem delicate, but it has a lot in it that can keep you healthy and strong . It’s loaded with iron, folate, beta carotene, lutein, various antioxidant compounds, and has about double the fiber of most other leafy greens.

INGREDIENTS
5 oz. fresh spinach
1 apple, such as Honeycrisp, thinly sliced
1/3 c. crumbled feta
1/4 red onion, thinly sliced
1/4 c. sliced almonds, toasted

FOR DRESSING
1/3 c. olive oil
3 tbsp. red wine vinegar
1 clove garlic or 1/2 shallot, minced
2 tsp. dijon mustard
Kosher salt
Freshly ground black pepper

DIRECTIONS
In a medium bowl, whisk together all dressing ingredients until completely incorporated. Season with salt and pepper.
Combine all salad ingredients in a large bowl. Add dressing, toss to combine, and serve immediately.
